Caramel Ingredients:
3/4CupSweet Potatocooked (this is only about 1 small sweet potato)
8-9Medjool Datespitted
2TeaspoonsPure Vanilla Extract
4TablespoonsNon-Dairy Milk
Topping Ingredients:
1CupWalnutschopped (You can use any type of chopped nut you like)
½CupCacao Nibs
DIRECTIONS
Caramel:
Boil your sweet potatoes. I boil mine with the skin on and remove the skin once cooled. I actually boil a few sweet potatoes the night before and let them cool overnight.
Place 3/4 Cup of smashed sweet potato in a high-powered blender. Add the almond milk, vanilla, dates, and sweet potato and blend until smooth.
Place the mixture in a medium bowl.
Assemble:
Line 2 large plates or a baking sheet with parchment paper.
Dip the apples in the sauce, and then roll into toppings.
Place the apples on the sheet and into refrigerator to cool. Once cooled, slice the apples and serve!
