Caramel Apple Slices

INGREDIENTS

  • 6-8 Apples your favorite; I like Fuji or Granny Smith

Caramel Ingredients:

  • 3/4 Cup Sweet Potato cooked (this is only about 1 small sweet potato)
  • 8-9 Medjool Dates pitted
  • 2 Teaspoons Pure Vanilla Extract
  • 4 Tablespoons Non-Dairy Milk

Topping Ingredients:

  • 1 Cup Walnuts chopped (You can use any type of chopped nut you like)
  • ½ Cup Cacao Nibs

DIRECTIONS

Caramel:

  1. Boil your sweet potatoes. I boil mine with the skin on and remove the skin once cooled. I actually boil a few sweet potatoes the night before and let them cool overnight.
  2. Place 3/4 Cup of smashed sweet potato in a high-powered blender. Add the almond milk, vanilla, dates, and sweet potato and blend until smooth.
  3. Place the mixture in a medium bowl.

Assemble:

  1. Line 2 large plates or a baking sheet with parchment paper.
  2. Dip the apples in the sauce, and then roll into toppings.
  3. Place the apples on the sheet and into refrigerator to cool. Once cooled, slice the apples and serve!
