Red Pepper Amuse Bouche

INGREDIENTS

  • 2 Red Peppers
  • 5 Medium Carrots
  • 1 Tablespoon Chopped Shallot
  • 1 Whole Green Onion
  • 1 Celery Stalk
  • 1 Tablespoon Fresh Parsley
  • Splash of Water

DIRECTIONS

  1. Place all ingredients in a Vitamix or high powered blender. Puree until smooth. Serve in appetizer cups and garnish with a sprig of fresh parsley.
