Instant Pot Coconut Chickpea Dahl

INGREDIENTS

  • 1 Cup Dried Red Lentils
  • 1 15 ounce can Chickpeas drained & rinsed
  • 1 sweet onion chopped
  • 2 15 ounce cans Coconut Milk
  • 1 Tsp Garlic chopped
  • 3 Tbsp Tomato Paste
  • 1 Tbsp Lemon Juice
  • 1 Tsp Ginger ground
  • 1 Tsp Turmeric ground
  • 1 Tsp Cumin ground
  • 1 Tsp Coriander ground
  • 1 Tbsp Curry Powder
  • Black Pepper
  • Handful Baby Spinach
  • Salt optional
  • 1 Cup Veggie broth

DIRECTIONS

  1. Add all ingredients (except spinach and salt) to the Instant Pot.

  2. Press the "Soup" button and let it do it's thang. ???? (This will take about 30 minutes.)

  3. Once cooked, stir in spinach and add salt if needed.
