Pumpkin Chocolate Chip Oat Bars

INGREDIENTS

  • 1 Cup Oat Flour
  • 1 Cup Old Fashioned Oats
  • 2 Tablespoons Flaxseed ground
  • 1 Teaspoon Baking Powder
  • 2 Teaspoons Pumpkin Pie Spice
  • 3/4 Cup Pumpkin Puree
  • 1 Cup Date Paste or 8-9 Medjool dates
  • 1/2 Cup Applesauce unsweetened
  • 1 Teaspoon Vanilla Extract
  • 1/4 Cup Mini Chocolate Chips + more for topping
  • 1/4 Cup Walnuts chopped (optional)
  • Sugar for topping optional

DIRECTIONS

  1. Mix all ingredients together.
  2. Pour into a 9×9 pan (Spray pan with oil or use parchment paper)
  3. Sprinkle top with extra chocolate chips or sugar. (I like to sprinkle with sugar!)
  4. Bake for 20 minutes at 350 degrees.
