Stuffed Bell Peppers

INGREDIENTS

  • 6 Bell Peppers red, orange, or yellow
  • ½ Cup Red Onion Chopped
  • ½ Cup Celery chopped
  • 1 Cup Carrots peeled and diced
  • 1 Cup Zucchini peeled and diced
  • 1 Cup Vegetable Stock
  • 4 Cup Brown Rice cooked
  • 6 Tablespoon Tomato Paste
  • 3 Tablespoons Lemon Juice
  • ½ Cup Fresh Parsley chopped
  • ½ Cup Fresh Dill chopped
  • ¼ Teaspoon Turmeric
  • ½ Teaspoon Sea Salt
  • Fresh Black Pepper ground

DIRECTIONS

  1. Preheat oven to 350 degrees. Cut tops off of peppers and reserve, clean out the seeds, arrange in a baking tray up right, place tops back on and bake for 30 minutes.
  2. Over medium heat sauté onions, celery, carrots and zucchini in vegetable broth for 5 minutes or until tender.
  3. Stir in the cooked rice, tomato paste, and lemon juice.
  4. Add fresh herbs to the pan as well as seasonings, including salt and pepper. Stir well.
  5. After 30 minutes and peppers are ready, remove from them from the oven and fill with rice stuffing.
  6. Place tops back on peppers, cover loosely with foil and bake for an additional 30 minutes until peppers are tender.
