Pineapple Guac-kale-mole

INGREDIENTS

  • 3 Ripe Avocados smashed
  • 1 T Lime Juice
  • Salt to taste
  • 1/2 Cup Red Onion
  • 3 Kale Leaves stems removed, very finely chopped
  • 1 Cup Pineapple chopped
  • 1/4 Cup Cilantro chopped (optional)

DIRECTIONS

  1. Smash avocado.

  2. Mix in lime, salt, chopped onion.

  3. Mix in finely chopped kale, and chopped fresh pineapple.

  4. Mix in or garnish with cilantro if using.
