Mac & Cheeze Stuffed Acorn Squash

INGREDIENTS

  • 1 Medium Yam boiled (skin removed optional)
  • 1/2 Cup Non-Dairy Milk unsweetened
  • 1 Sweet Onion
  • 1/2 Teaspoon Minced Garlic
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon Dijon Mustard
  • 6 Tablespoons Nutritional Yeast
  • 1/2 Teaspoon Smoked Paprika
  • 1/4 Teaspoon Ground Turmeric
  • Sprinkle of Black Pepper

Other Ingredients

  • 1 Acorn Squash halved and baked
  • Whole Wheat Pasta boiled or any of you're favorite pasta

DIRECTIONS

  1. Add all sauce ingredients to a high powered blender and blend on high until smooth and warm.

  2. Pour sauce over cooked penne pasta.

  3. Serve in acorn squash halves.
