Banana Oatmeal Breakfast Cookies

INGREDIENTS

  • 3 Small Bananas, extra ripe 2 if larger
  • 1 Cup Old Fashioned Oats
  • 1 tsp Vanilla Extract
  • 1 T Ground Flaxseeds
  • 1/4 Cup Date Sugar (or applesauce) OPTIONAL
  • 1/4 Cup Walnuts chopped
  • 1/4 Cup Cranberries

DIRECTIONS

  1. Preheat oven to 350 degrees.

  2. Smash the bananas with a fork.

  3. Mix all ingredients together.

  4. Line baking sheet with parchment paper.

  5. Scoop out cookie mixture and create about 12 cookies

  6. Flatten the cookies a little so they are more flat (as opposed to round / globe shaped).

  7. Bake for 14-16 mins. (if you use applesauce instead of date sugar, you will want to cook a little bit longer for about 18 minutes)
