Happy Easter! Today I will be making the easiest and most festive Easter cocktail ever. Carrot Mimosas! I am a huge supporter of champagne and sparkling wine, and a huge fan of veggies, so why not put them together?

It may sound a little odd to put carrot juice in your bubbly, but I promise that it’s really delicious! Well, it’s delicious if you like carrot juice. 🙂 If you hate carrots, then don’t make this…just stick to the bubbly by itself.

Today I’ll be with a few friends celebrating the holiday, and I’m pretty sure these will be a big hit.

Also, in Lily news, I am giving the tot her first Easter basket today! Not what she will know whats going on, but it will be very cute and photo worthy. What is extra special about her basket is that this basket was mine when I was little! My mom saved it after all these years! My mom was seriously the best at saving our most precious items and keepsakes from when my brother and I were kids. I LOVE that I get to pass it down to Lily.

Carrot Mimosas

This is a delicious and festive cocktail to serve for a spring party or Easter! 

INGREDIENTS

  • 2 ounces Carrot Juice
  • 5 ounces Sparkling Wine

DIRECTIONS

  1. Pour carrot juice into glass.

    Top off with sparkling wine.
