Hi Friends! I hope you are enjoying the holiday.  It’s so crazy busy this time of year huh?!  My girlfriend and I finally finished up our Christmas shopping today, and I’m so thrilled to have it all completed!  Before we went shopping today we made lunch at my house and we whipped up this tasty fruit salad.  We were both in the mood for something wintery, sweet, and fresh, so we put our heads together and came up with this Gingered Fruit Ambrosia!

This recipe is so yummy, and it can easily be adapted to your taste.  The chia seeds are pretty important as they thicken the liquid (and they are so healthy!)  If you don’t have any yogurt on hand or if you don’t want yogurt in the recipe, simply omit it!  Adjust the ginger and cinnamon to your taste!  The great thing about fruit salads is that they are so customizable!  Below is our favorite variation! (Serves 4-6) Enjoy!
