Hands down one of the best & easiest healthy cookie recipes on the internet.

ALSO, forgive this midnight iPhone photo I just took of these cookies. I promised I’d put the recipe in Instagram Stories tonight, so I released the perfectionism (clearly!) and just got the recipe up.

Refined sugar-free, oil-free, gluten-free, and totally sos-free.

There are lots of different versions of these on Pinterest; some require baking powder, oil, or eggs, and I’m not really sure why. Unless you’re going for a bakery-style cookie (which these are not that) then they really don’t need a lot of ingredients.

These banana oatmeal cookies are perfect for breakfast on the go, for healthy kids snacks, or for a healthy afternoon tea cookie. Honestly they’re great for anything.

I ate three his morning after my matcha smoothie; they were addicting! Over the past couple years, I have become allergic to raw bananas, so I love that I am able to eat these and enjoy bananas in a different form.

Lastly, you can’t mess these cookies up. Since they aren’t traditional cookies and they don’t rise, you don’t even have to use exact measurements.

They’re basically fool-proof. You need really ripe bananas and oats to make this happen, basically everything else is optional. You don’t have to use flaxseeds or date sugar; I just had those on hand so I went with it. You can add in whatever “mix-ins” are your favorite.

I like to add cranberries and walnuts, but sometimes I just do chocolate chips.

Some ideas are;

♡cinnamon & raisins

♡almonds & cardamom

♡blueberries & lemon zest

♡chocolate chips & a Tablespoon of nut butter

Banana Oatmeal Breakfast Cookies

Servings 12 cookies

INGREDIENTS

  • 3 Small Bananas, extra ripe 2 if larger
  • 1 Cup Old Fashioned Oats
  • 1 tsp Vanilla Extract
  • 1 T Ground Flaxseeds
  • 1/4 Cup Date Sugar (or applesauce) OPTIONAL
  • 1/4 Cup Walnuts chopped
  • 1/4 Cup Cranberries

DIRECTIONS

  1. Preheat oven to 350 degrees.

  2. Smash the bananas with a fork.

  3. Mix all ingredients together.

  4. Line baking sheet with parchment paper.

  5. Scoop out cookie mixture and create about 12 cookies

  6. Flatten the cookies a little so they are more flat (as opposed to round / globe shaped).

  7. Bake for 14-16 mins. (if you use applesauce instead of date sugar, you will want to cook a little bit longer for about 18 minutes)
