If you like festive fall cocktails (or mocktails) this one is IT.
If you live somewhere unusually warm this time of year like I do in South Carolina, this cocktail is the perfect “it’s fall but it’s still hot as fuck outside” boozy beverage. (As I am writing this it is November and it was almost 80 today & ultra humid)
It’s definitely the kind of weather for either iced sweet tea or a chilled cocktail.
Since youre here, I’m going to presume you’re down for the latter, so let’s get to it.
This Apple Cider Mojito is the perfect amount of sweet and spiced. It’s a cocktail that can take you from September – end of year for any occasion.
I’ve had multiple taste testers of this, and they’ve all given it a yes, and btw it’s absolutely delish even without the rum.
PSA: This recipe calls for a hoemade simple syrup. DO NOT BE INTIMIDATED by this. I used to be scared of making my own sugar syrups because they seemed way too labor intensive, but lemme tell u, they are not hard. If you can boil water you can make a simple syrup. They’re so easy. Can u mix water & sugar together?? K, then u can make your own specialty sugar syrups. Plus, the syrup will keep for months in the fridge.
When I have people over I always like to have a variety of drinks on hand; red/white wine, bubbly, beer & seltzers (I think these are yuck, BUT it’s not about me when entertaining!), PLUS 1 signature cocktail that’s festive for the occasion – that’s where something like this Apple Cider Mojito would come in.

Apple Cider Mojito
INGREDIENTS
Cinnamon Sugar Syrup
- 1 Cup Water
- 1 Cinnamon Stick
- 1 Cup Brown Sugar
Cocktail Ingredients
- 1 T Lime
- 3 Fresh Mint Leaves
- Ice
- 1/4 Cup Cinnamon Brown Sugar Syrup
- 1/4 Cup Apple Cider
- 1/4 Cup White Rum
- Club Soda to top the drinks
DIRECTIONS
Syrup

Add 1 cup water & cinnamon stick to saucepan. Bring to boil.

Remove from heat and stir in brown sugar. Let sit while preparing other ingredients. (You can also make ahead and store in fridge so it's chilled)
Cocktail

Muddle the lime & mint in a cocktail shaker.

Add your homemade syrup, apple cider, & rum to the cocktail shaker. Fill up with ice.

Shake Shake Shake & pour into whatever ice-filled glass you wish!

Top with club soda and mint!
